Pumpkin Pie Bars

Yield: 32 bars
(2, 9X13 inch pans)

Crust:

3 C Flour
1 ½ C Brown Sugar
1 ½ C Margarine
1 ½ C Oatmeal

Combine ingredients with a pastry blender. Then press into a sprayed pans. Bake the crust for 5 minutes.

Filling:

3 lbs Pumpkin
2 ¼ C Sugar
6 Eggs
3 13.5 oz cans Evaporated milk
3 t Pumpkin pie spice

Combine ingredients in a mixing bowl using a wire whisk. Pour mixture over warm crust. Return the pans to the oven and bake for 10 minutes.

Topping:

1 ½ c chopped peanuts
1 ½ c brown sugar
6 T margarine

Combine ingredients with pastry blender until crumbly.
Sprinkle over filling. Return to oven, bake 40 more minutes or until filling is set.
A knife inserted into the center will come out clean. Cool. Refrigerate.

This recipe makes two, 9 X 13 inch pans. These bars freeze well.
